Grass Frosting Cupcakes with Toadstool Sugars

I love these cupcakes! They're easy to make and so cute decorated with ladybug or toadstool sugar decorations.

Tools for Grass Frosting Cupcakes

For decorating, you'll need:

Grass pastry tip
Coupler
Pastry bag
Leaf Green or Mint Green gel paste food coloring
Cupcake liners
Toadstool or Ladybug sugar decorations

Instructions

Make a simple buttercream frosting. Make sure the frosting is a little on the stiff side -- if it’s too soft, the grass will droop. If you're looking for a good recipe, try the American Buttercream recipe from Glorious Treats or this one from Joan's on Third.

Add the gel paste food coloring, a drop or two at a time, until you get the shade of green you want. Place the tinted frosting into a pastry bag fitted with a grass pastry tip.

Grass Frosting Cupcakes How To

Starting at one edge, place the tip just over the cupcake and smoothly and quickly pull up as you squeeze a small amount of frosting onto the cupcake. I like my ‘grass’ to look more like a meadow so I make the ‘blades’ a little longer. If you'd like more lawn like grass, place the tip onto the cupcake and make the ‘blades’ about a 1/4”.

Place toadstool or ladybug sugars before the frosting sets and enjoy!
